The following pictures were captured during a descriptive taste testing study. My partner and I investigated into the possibly of coconut flour being employed and desired as a functional food in vanilla bean cupcakes.
San Francisco State University organic campus garden.
This garden was a collaborative effort between the Dietetic Garden Committee and the ECO students. I served and will continue to serve on the Dietetic garden committee from fall 2013 to spring 2014. The intention behind this garden was to cultivate a deeper relationship with nature through gardening and provide organic food to the community through farm to table events and free community harvest distribution.
I cheerfully served Alta Bates Summit Medical Center in Oakland, CA, as a dietary department volunteer from March-October 2013.
Be the change project at Hayes Valley permaculture farm in San Francisco, CA
Hayes Valley was a permaculture farm erected on a 2.2 acre plot, which previously employed a freeway overpass. It was successfully erected in approximately 400 days. Unfortunately, it was torn down early 2013 and replaced with 182 unit apartment building. The purpose of this project was to give back to the community through distributing food produced with a low carbon footprint. We baked fresh bread, wholesome pizza, and other treats in a cob oven and created delicious smoothies utilizing a human-powered blender.
The word permaculture is derived from the combination of the words permanent agriculture and permanent culture. Permaculture is a holistic approach in designing perennial agricultural systems and human settlements that mimic the relationships found in natural ecological systems.

San Francisco State University's on-campus fine dining restaurant: The Vista Room. Fall 2012.
Nicaragua and Honduras April 2012.
I spent two weeks with the delightful people of Nicaragua and Honduras. I traveled to the Nicaraguan and Honduran garbage dumps with 50 others to distribute homemade meals and clean water. We celebrated the people and spread love through music, dancing, and painting.

I spent a beautiful amount of my summer reconnecting with the earth through my wwoofing adventure. This endeavor was actualized through my desire to gain a deeper understanding of the derivation of food. I milked a cow by hand twice a day, gathered chicken eggs daily, fed pigs restaurant leftovers and food scraps from the farm, learned how to identify native edible plants, gained permaculture experience, and I met incredible individuals along the way.
